🚨NEW CHEESE ALERT!!!🚨L'Etivaz, an Alpine cheese made high in the Swiss Alps is quite a special cheese! Made only from the summer milk of cows grazing on mountainside meadows, the cows and cheesemaker live on the mountain the entire summer, with the cheesemaker making cheese each day in copper vats in small chalets. Only about 20,000 wheels are made each year. Tasting notes are floral and fruity, with sweet nuttiness and some definite funk on the nose with a slightly crystalline texture and smooth finish. So amazingly good guys!

Ironically, we grabbed all cow's milk cheeses from this farmstead goat's milk farm, but trust us, their cow's milk cheeses are just as good! BLUE YONDER is a natural rinded creamy blue that is overall a very mild, but complex cheese with earthy notes closer to the rind. SHELDRAKE MOON is the perfect brie-style cheese, bursting with notes of butter and cream. And last is SHIRE, a beer washed gouda soaked in Shire Ale from nearby Hopshire Brewing. Chris's favorite cheese is back! Moliterno al Tartufo is in the house! This pecorino cheese is aged 6 months in Sardinia before being sent north to Tuscany's truffle country. There, they drill holes into the cheese and stuff it with truffle paste. The absolute perfect cheese for the holidays, this is one you simply can't pass up! This will also be included in our Cheeses of the Season class on 11/29 that will have a serious lineup of hard-to-find Fall/Winter cheeses paired with some baller wines!
